Week 25, Day 177 - Good Changes

Now that our move to Alaska is a little over 3 weeks away, it is really feeling real.

Is it weird that one of the saddest parts about moving is that I just found out about Winder Farms (message me for a referral link for $50 in free groceries!)? We got our grocery delivery on Monday and have been sticking to the dinner schedule I set up. It's amazing! We're eating real food, and since I planned in vegetables and fruits, we're eating more of those, too. This is a game changer, and I'm pretty sure the entire state of Alaska doesn't believe in something as hipster as grocery delivery. Oh well.

I have a feeling this month of eating pretty healthy and cooking way more will prepare me for my new Alaskan role of literal part-time health nut. Just because I would want to see this, I'm posting our dinners that were based off of this week's Produce Box:

Monday - Three Cheese Ravioli with Roasted Heirloom Cherry Tomatoes (I didn't use sauce and it definitely needed it. The ravioli itself was good, though.)
Tuesday - Matt's Famous Steak Street Tacos with avocadoes (so good!)
Wednesday - Matt's Chicken with lemon, roasted sweet potatoes and tri-colored carrots
Thursday - Hamburgers and Cabbage Crunch salad
Friday - eat out or Chicken Cordon Bleu with rice (our go-to fast meal)
Saturday - Chicken Enchiladas
Sunday - out at Family Dinner

We got a free lunch kit for signing up for Winder Farms, so I've been eating hormone-free turkey and cheese sandwiches for lunch. I've been eating the Utah Cameo apples for snacks. And I just realized I haven't made any smoothies this week because I always run out of time in the morning. Oops!

I normally don't worry about hormone-free meat, but I think I need to start. I actually don't eat that much meat in the first place because I'm lazy, but since I have a hormone disorder I should probably care more. My hormone levels are pretty normal right now, and I don't want the chicken or other meat I eat to mess that up again. I think Winder Farms has all hormone-free meat, so the burgers, chicken and turkey we got are all safe for me to eat. That's a relief.

Now that I'm gonna start cooking more, I need some delicious, easy, mostly healthy recipes. Suggestions? Comment or email me. Oh, and how much do you spend on groceries a week?

The more I think about it, the more excited I am to have a change. I love where I work now and I'll miss the people a lot. But it will be nice to have a change of scenery and daily duties. I'm hoping my new job will be in the morning so I can have the afternoons to run, cook healthy meals, work on my Etsy shop, and do some freelance copywriting. I might even try to strike up some private art classes while I'm there if there's a market.

And of course, the fact that we will probably be moving back to Utah sometime relieves some of the sadness of leaving friends and family behind. We're not leaving forever yet, just for a little bit. At least that's what I keep telling myself.

PS: Doing ok on the running front. I definitely took the mileage down a notch but hopefully that will let me run more than 2x in a week.

I can't believe you are leaving so soon! I thought you would leave in May or something. Wow. And your dinners sound awesome!
